With a rich family reputation dating back to the 19th century, Domaine Tollot-Beaut is currently managed by Nathalie, Jean-Paul, and Olivier, three passionate cousins dedicated to respecting the terroirs.

Located in Côte de Beaune, the estate now spans 25 hectares across the communes of Chorey-les-Beaune, Beaune, Savigny-les-Beaune, and Aloxe-Corton, with a majority of Pinot Noir and 2 hectares of Chardonnay. The vines benefit from an almost semi-continental oceanic climate and limestone and marl soils.

Vineyard work is almost entirely manual, including weeding and soil plowing. An in-depth knowledge of the terroirs, passed down through five generations, along with the presence of old vines, allows for precise and meticulous viticulture, where grapes are carefully cultivated. Fermentation lasts 10 to 15 days, with punch-downs and/or pump-overs once or twice a day. The wines are then aged for 16 to 18 months in barrels, with the proportion of new barrels varying depending on the cuvées and vintages: around 20% for regional and premier cru appellations and up to 50% in some years for grand crus. The result is powerful, elegant, and balanced wines that express the full complexity of Burgundy wines.

 

 

Tasting review :

Color: purple, garnet with violet highlights.

Nose: pleasant and flattering, revealing aromas of blackberries, mocha, and mild spices (clove).

Palate: ample and pleasant. Structured, smooth, and full of character. Supported by a full and dense texture. Pure finish with remarkable length.

Pairing: poached chicken with porcini mushrooms.

Comment: the estate showcases all its talent on one of Beaune's finest plots.
