Visual aspect: a crimson, garnet-red colour.
Nose: delicate and intense on aromas of griotte cherry and a balsamic, sweet scent. After swirling there is a smoky touch and a hint of liquorice. It has not opened up yet.
Palate: smooth first taste, freshness on development, satin-smooth texture and powerful body. The tannin is a little tightly-knit, on the gums too. Woody hints mark the finish with touches of Kirsch.
Match with food: boned quails stuffed with foie gras served in thickened cooking juices with caramelised vegetables.
Comments: this wine is still in its raw state of youth, but has great potential!
