Visual aspect: pale gold colour with an elegant and rapid effervescence. Nose: kumquat, butter, evolving to a good complexity. Palate: flavours of exotic fruits (papaw), kumquat. A very good aromatic complexity, a buttery and full-bodied palate. Wonderful aftertaste. Match with food: veal filet mignon with Ratafia-flavoured sauce; calf's sweetbread with Chardonnay-based Ratafia. Comments: a grand Champagne.
