Visual aspect: clear gold yellow colour, with a persistent sparkle, fine bubbles. Nose: finesse, with a certain discretion. A nose marked by the mirabelle plum, with a citrus side. Palate: supple and pleasant first taste, with a beautiful acidity which gives it some freshness. Nice complexity of the palate. Maybe a dosage quite sensitive. Match with food: with a dinner cocktail; offals; veal liver sweetbreads.
