Visual aspect: the golden-yellow colour is vibrant; the effervescence is consistent and regular. The bubbles are delicate.
Nose: discreet hints of development, buttery hints, and aromas of quince jelly and hawthorn. Good structure and powerfulness in its aromas and fine balance.• Palate: the first taste is pure, lively, with wonderful acidity, on flavours of mature citrus, pink grapefruit, wild orange. The sensation on the palate is velvety, silky and there is marvellous effervescence. Match with food: shellfish.
