Color: golden hue, sparkling. Nose: as delicate as it is lively, mirabelles, yellow and white peaches, butter and biscuits. Equally elegant and engaging. Palate: creamy, very subtle, delicate, lively, with white flowers. The mid-palate is vinous and adds the necessary zest to match with many dishes. Buttery finish. Pairing: line-caught sea bass, butter emulsion, and Camargue rice. Comment: an elegant champagne, very balanced. It never disappoints.
