Champagne Lacroix-Triaulaire
Color: golden hue, silvery reflections, beautiful brilliance. Fine and sparse bubbles. Nose: lime tree, milky, buttery, pear. Palate: white fruits (pear), thicker mid-palate thanks to the bubbles but remains fine and delicate. The finish is buttery and saline. Nice length. Pairing: diced abalones and scallops, golden apples, fresh cheese espuma, and tarragon. Comment: the bubbles are fine and allow the freshness and finesse of the fruit to be preserved.
