Color: pearly hue. Nose: expressive, complex. Ripe melon, apple, fresh almond, cut grass, chamomile, cereals, yeast, soy, mushrooms, hazelnuts. Palate: balanced, very complex. Herbaceous, salty, woody. Very pleasant, aromatic, fresh, melon, papaya. Long and creamy finish, between sweetness and bitterness. Pairing: joconde biscuit lightly flavored with buddha's hand, roasted citrus and bitter almond ice cream. Comment: very complex, a gastronomic sake.
