Aeration reveals delightful pastry notes with a slight toastiness. Palate: rich and delicious, animated by a lovely vivacity. Salivating finish on ripe fruit. Pairing: perfect with John Dory fillet in lemon butter. Comment: a magnificent Blanc de Blancs from one of the best vintages of the decade.
