Visual aspect: quite deep gold yellow colour, beautiful intensity. Brilliant, persistent bubbles. Nose: expressive and aromatic. Quince, notes of exotic fruits, a vegetal and hay hint. Palate: nice first taste, broad palate with honey and wax. The finish is slightly evolved and finishes with a sensible dosage. Match with food: scallops tartar with Yuzu. Comments: bravo!
