Visual aspect: an averagely dark crimson hue, with ruby tinges.
Nose: first a balsamic veil, then slightly volatile revealing hints of Kirsch, cherry in eau-de-vie and still a distinct toasted scent of maturation.
Palate: full-bodied, then generous giving a satin-smooth sensation. Cherry in eau-de-vie flavours again, along with hints of spices and liquorice. The tannin is still rather dry. The warm finish is tightly-knit behind wonderful freshness of cherry and wilted flowers, still quite distinct maturation notes .
Match with food: duck breast stuffed with foie gras, served with a red fruit sauce and polenta.
Comments: wait to see how it develops.
