Visual aspect: pale yellow colour, beautiful effervescence. Nose: good complexity, aromas of white-fleshed fruits and pastry. Palate: fat, delicious, fine, elegant, with flavours of fruit, toast, honey. A lovely aftertaste with saltiness in the finish. Match with food: saffron-flavoured pan-fried scallops; Chaource cheese. Comments: an excellent Champagne, ideal for a wine.
