Visual aspect: pale gold colour with clear straw yellow tinges. Fine and light bubbles. Nose: liquorice sweet, chalk, chrystallised lemon, verbana, limetree, raspberry, grilled hazelnut. Palate: creamy effervescence, minerality, pure, fleshy, well-structured. Melted and soft finish. Match with food: pan-fried scallops with cream and candied lemon with some grains of caviar. Comments: a tribute to Champagne!
