Color: clear and brilliant with a pale golden color and light greenish reflections, oily tears. Nose: beautiful elevated intensity of flavour, with great purity of ripe yellow pear, quince, juicy peach, supported by fine creaminess of butter and biscuit. Gentle oak notes of vanilla, very fine complexity for a regional Bourgone wine. Palate: a dry wine with wonderful intensity and density of fruit (ripe lemon, pear and pale fleshed peach). Very fresh and mouthwatering acidity brings balance and tension to the wine. Midpalate shows creamy and oily texture adding weight within a medium body. Very fine managed oak notes (vanilla, clove) on the background. Pairing: perfect with a cold smoked wild salmon with lemon crème fraiche and black caviar. Comment: a very good quality example of regional Burgundy, definitely overperforming.
