Color: clear and brilliant with a pale golden color and light greenish reflections, oily tears. Nose: quiet aromatic, open and refined, with appealing notes of fresh butter, fresh hazelnuts and bees wax wrapped in fine oak notes of vanilla and scent of toast and smoke, in combination with ripe lemon, fresh ripe peach and baked yellow apple. Very fine complexity. Palate: great tension on the attack with a crisp acidity, in combination with great density and flesh. The midpalate is full of flavour with ripe citrus, fresh but ripe yellow stone fruits supported by fine creaminess, wax and vanilla coming from fine oak treatment. The finish is very fresh and persistent. Pairing: great with pan-fried sea bass served with a lemon butter sauce and almond shavings. Comment: great example of Chassagne-Montrachet village, showing great freshness and purity in combination with texture, oiliness and richness.
