— Pommard Les Jarollières 1er Cru 2023 —

At Domaine Jean-Marc Boillot, based in Pommard, all grapes are hand-harvested and undergo rigorous sorting to retain only the finest berries. Vinification is carried out with utmost respect for the fruit and the character of each vintage.

The Pommard Premier Cru Les Jarollières 2023 comes from a 1.31-hectare plot planted between 1929 and 1945 on clay-limestone soils rich in grèzes litées, with an east/southeast exposure. The Pinot Noir is fully destemmed, then vinified in stainless steel tanks with a cold pre-fermentation maceration lasting 6 to 8 days, followed by a high-temperature alcoholic fermentation. The vatting lasts between 18 and 21 days, with a few pump-overs and minimal punch-downs, before a vertical pressing. The wine is then aged for 13 months in oak barrels (228L, 350L, and 390L), 30% of which are new, with no racking. The result is a characterful, structured, and refined wine that faithfully expresses the distinctive identity of the Jarollières climat.

 

Tasting review

Color: deep ruby with violet highlights. Bright and limpid, showing impressive concentration.
Nose: opens with aromas of fresh red fruits (Morello cherry, raspberry), followed by delicate floral notes (peony, dried rose). With aeration, hints of liquorice, white pepper, and subtle oak emerge.
Palate: lively and precise, with beautiful tension. The mid-palate is driven by vibrant fruit, supported by fine, silky tannins. Well-structured, with a persistent finish marked by mineral and lightly smoky notes.
Pairing: duck breast with cherries.
Comment: a Premier Cru from Pommard we simply love.
