Visual aspect: a garnet-red hue with ruby-red tints.
Nose: first impression: a clean, powerful wine on aromas of blackberry and spices. After swirling: hints of buttery toast, precious wood, pencil lead and a touch of blackcurrant. It is elaborate.
Palate: straight away it is full-bodied and concentrated. Development reveals wonderful freshness and fleshiness. Flavours of juicy cherries and spices. The tannin is closed, enveloped by the velvety texture. The finish is long and delicately generous. A wonderful fresh, fruity sensation on retro-olfaction.
Match with food: sautéed rolled fillet of venison in a deglaze sauce using the same wine, thickened, adding a touch of spice and served with a delicate celery purée.
