Visual aspect: a vivid, straw-yellow hue, delicate bubbles around the cordon.
Nose: discreet, delicate, on fragrances of small red fruits, fresh butter, some hints of cocoa, opening up after swirling on a wide range of marvellous aromas.
Palate: pure on the first taste, full-bodied and fresh, well-balanced, intensified by the freshness of the bubbles which cover the palate well. A silky, absolutely long, delicate finish.
Match with food: John Dory grilled with Espelette chili pepper.
Ageing potential: 5 years plus
