Visual aspect: a pale yellow colour with greenish tinges. Delicate, persistent bubbles. Nose: very open and expressive with fruity (yellow-fleshed fruit), floral (small wild flowers) aromas. Palate: slightly buttery taste, it is full-bodied and supple, with excellent length. Tremendous maturity for this wine. Match with food: poultry in a cream sauce, toast topped with pig's trotter, fish cooked on a hot grill plate, tapas. Comments: a great Blanc de Blancs.
