Palate: complex, velvety, melted, racy, full-bodied and subtle at the same time, gourmet and delectable. Mild spices. Silky, fine finish on melted and delicate tanins. Match with food: poultry with vanilla and melting potatoes; young wild boar stew with cranberries and frog of the Ile de Ré. Comments: haute couture and delicacy. Bravo! Has to be decanted 2 or 3 hours before service.
