Visual aspect: intense, with caramel-coloured tints, orangey and amber shades. Nose: expressive and complex, on notes of hazelnut, caramel, then macerated pear, candied citrus, peel, nut (hazelnut, almond), a mentholated sensation. Final scent of tobacco, cocoa, white pepper. Palate: vivid first taste, linear acidity, supple and lively mid-palate; salty finish. Balance and beautiful finesse. Gourmet pairings: lobster flambéed with Cognac, and yuzu-flavoured cream. Comments: beautiful product, wonderful balance, leaving a neat palate.
