Visual aspect: clear yellow colour, vivid and fine bubbles. Nose: open, typically Chardonnay, vinous and brioche; yeast, fruit paste, quince paste. Undergrowth, damson, ripe mirabelle plums. Palate: fleshy first taste, moreish with aromas of praline, nougatine. Quite long-lasting aftertaste. Match with food: cep tartare; 18- or 24-month-old Comté cheese. Comments: a grand Champagne woth a beautiful harmony.
