Visual aspect: brilliant, limpid, straw-yellow colour, silvery tinges. Nose: floral, vanilla, mineral accents. Palate: pure at first taste, complex in the mid-palate, toasty, woody, floral notes, present minerality. Long finish marked by freshness and saline notes. Match with food: Chaource cheese; guinea fowl with cooking juice. Comments: a bit atypical of the AOC but it is a well-balanced and broad wine. An aromatic complexity of genuine quality.
