Visual aspect: pale yellow, straw-yellow tinges. Fine bubbles, persistent bead of bubbles. Nose: verbena, rose, lemon, grapefruit, broom. Palate: supple first taste, creamy effervescence. Develops towards white-fleshed fruits, beautiful acidity, very pure. Fleshy and mineral finish, with a very persistent sensation of freshness. Match with food: scallops and Yuzu lemon emulsion. Comments: a nice cuvée for iodized and refined meals.
