Translucent, it has a light yellow colour with golden tints. The bubbles are fine and the foam is persistent.
It gives fragrances of good intensity, with aromas of white blossom, apple and the soft interior of bread.
The first taste is lively, with marvellous freshness; it is full and creamy.
It has a long finish.
Serve with John Dory cooked with fennel.
