Champagne Ployez-Jacquemart
Visual aspect: clear yellow colour, gold and green tinges. Regular and fine bubbles. Nose: a plum side, a certain vinosity, peppery, mild spices. Palate: vivid first taste, with blackcurrant flavours. A richness that coats the palate. Match with food: Dombes quails with grapes, foie gras sauce. Comments: well-dosed. We find aromas of white-fleshed stone fruits (mirabelle plum).
