Visual aspect: deep garnet-red colour, purplish tinges; translucent, brilliant hue. Nose: gamey first nose. After swirling, the aromas evolve to notes of black fruit compote. Palate: pure, powerful first taste; nice texture. The mid-palate opens up on present and young tannins. Match with food: Corsican young goat cooked 36 hours with Provence herbs, served with gnocchi. Comments: this wine has to be carafed 1 hour before serving. Beautiful texture in the mouth, great potential.
