In June 2025, Maison Taittinger inaugurated the Polychrome Table at its historic headquarters in Reims. Conceived as a tribute to the art of blending, this exceptional table offers visitors a unique sensory immersion where each guest becomes the artist of their own blend.
Here, every participant is invited to explore, taste, and create by pairing the dishes imagined by Chef Charles Coulombeau with the House’s different cuvées.

This experience is part of Taittinger’s broader offering, which also includes cellar tours and the Chromatique concept store. It provides the perfect opportunity to (re)discover some of the House’s most emblematic cuvées, as well as to explore its latest gems, such as Comtes de Champagne 2014, available since October. Sourced from meticulously selected parcels in the Côte des Blancs, this 100% Chardonnay Grand Cru reveals the character of a vintage defined by freshness, precision, and energy. Aged for 10 years in the cellars, dosed at 8–9 g/l and vinified 6–8% in oak barrels for 4–6 months, this cuvée shows remarkable intensity and promises excellent ageing potential.

Color: pale golden yellow with bright reflections and a fine, intense bead of bubbles. Nose: opens with refined aromas of candied lemon, pear, white flowers, and chalk, enhanced by a subtle toasted note.
Palate: silky texture supported by delicate effervescence and perfectly integrated acidity. The chalky minerality typical of the Côte des Blancs shapes the wine, bringing both tension and length. The finish is pure and persistent, with lingering notes of citrus and almond.
Pairing: roasted turbot with beurre noisette, cauliflower mousseline, and lemon emulsion.
Comment: a great Blanc de Blancs with superb ageing potential.
