Color: brilliant with an intense golden color and light amber-coppery reflections. Nose: very aromatic, rich and complex nose of caramelized hazelnuts, dried apricots, toast, biscuit, scents of dry spices, vanilla and honey, reminiscent of aged Champagne. Palate: good concentration and flesh (for a non-alcoholic wine) with very creamy mousse and crisp acidity. Midpalate is full with dried apricot, ripe fresh orchard fruits in combination with fine creaminess of biscuit, bees wax and notes of hazelnut. Fresh and creamy aftertaste. Pairing: could be great with aged cheese or butter poached lobster tail with a beurre noisette sauce. Comment: excellent example of non-alcoholic sparkling wine with fine complexity and depth.
