Color: pale gold, brilliant. Nose: open, subtle, with toasted and grilled notes, white flowers. Palate: crisp attack, fine bubbles. Beautiful roundness, finesse, and balance. A toasted, mentholated aspect on the finish. Pairing: on its own, as an aperitif or with a Chaource cheese; Bresse chicken with apricots. Comment: a lovely bottle, aged for three years on lees, allowing the wine to express itself easily. Cellar for 5-10 years.
