Palate: concentrated, with tight yet silky tannins and very fresh acidity that brings great tension. The mid-palate is dense and elegant, centered on ripe red cherries. Long and intense finish. Pairing: lamb chop with thyme jus and confit garlic. Comment: an excellent concentration of flavors and lovely freshness.
