The terroir as a signature

Grower-producers and true artisan winemakers, Anthony and Clemence Toullec craft Champagnes deeply rooted in their terroir. Their 5-hectare Premier Cru estate spans 24 parcels across Rilly-la-Montagne, Sacy, Montbré, Taissy, and Avenay-Val-d’Or, at the heart of the Montagne de Reims. This patchwork of plots, combined with environmentally respectful viticultural practices, shapes the distinctive identity of their cuvées.

Certified High Environmental Value (HVE) level 3 and Sustainable Viticulture in Champagne, the vineyard is managed according to a reasoned, eco-conscious philosophy that promotes biodiversity and soil vitality. Natural grass cover preserves the landscape, limits erosion, and enriches the microbial structure of the subsoil. Pruning, canopy management, and harvesting are all carried out by hand, perpetuating an artisanal savoir-faire attentive to every vine. The grapes are pressed immediately at the estate’s own pressing center, and each parcel is vinified separately to highlight its unique character. Only the purest heart of the cuvée is retained, ensuring precision and authenticity.

A significant part of the winemaking takes place in oak: the musts are aged in barrels crafted from Montagne de Reims oak by the Tonnellerie de Champagne. This gentle ageing process imparts roundness, aromatic complexity, and finesse while preserving the natural expression of the terroir.

The wines are then matured slowly in large oak casks or in traditional chalk cellars, where they evolve in optimal natural conditions. The result is a collection of characterful, terroir-driven Champagnes
— Les Vicomtés, Pinot Noir, Chardonnay, blending cuvées, Rosé de macération, and Coteaux Champenois — all crafted with precision and sincerity. Each bottle captures the authenticity of its parcel and the artisanal spirit that defines Champagne A&C Toullec.
