Color: clear, fine bubbles. Nose: cotton flower, banana, tropical fruits, pear. Fermentative and saline touch. Palate: nice freshness, creamy attack. The effervescence spreads over notes of rose, lychee, pear, banana, fresh almond. Slight sweetness. Pleasant bitterness on the finish, with aromatic complexity. Pairing: aperitif; carpaccio of scallops, wakame and citrus fruits. Comment: quite a rich and complex sparkling sake, perfectly balanced. A success.
