Color: clear, silvery green. Nose: intense, pineapple, banana, pear, melon. Cereals, pastry, white flowers. Finely iodized tension. Palate: lively, fresh and acid. Green apple, pear, banana, dried herbs. Cereals, stone fruits, candied lemon. Fairly oily and structured texture, slightly milky and saline. Nice straight finish. Pairing: butternut squash, kale and crispy tofu; poultry with steamed vegetables. Comment: a great sake, fragrant, with a lot of complexity.
