Color: clear, viscosity. Nose: powerful, mirabelle plum, fresh almond. Cane sugar, cereals, pepper. Apple, eucalyptus, mint. Hint of tofu, light smoke, flint, dried white flowers, chalk. Palate: intense, bitter. Marked alcohol, not very sweet. Pepper, gentian, wormwood, herbaceous, apple. Subtle yeast side at the end of the palate, long, delicate. Balanced. Pairing: pan-fried bananas; beef pho. Comment: a shochu for insiders, very powerful and well seasoned. Serve chilled.
