Visual aspect: a very deep garnet-red hue with gleaming, delightful mahogany-coloured tints. Nose: delicate and complex, very typical of Cabernet grown in the south, a touch of cherry and cedar. It is going to develop towards scents of precious wood. Also, it reveals aromas of spices, cloves, violet-flavoured liquorice and hints of undergrowth. Palate: it stretches out on marvellous acidity and is very long, good structure and an exceptional finish. Match with food: grilled lamb chops. Comments: decant two hours before serving. A magnificent wine, a credit to its appellation.
