Visual aspect: lustrous, it has a vivid dark garnet-red hue.
Nose: marvellous fragrances, giving freshness; it is expressive with aromas of red fruit such as raspberry, cherry, dark-red plum. A few hints of spice (grey pepper) and a scent of violet.
Palate: pure on the first taste and rather austere with very fine tannin on the second taste. It gives some fruity flavours; it is dense, but very mature.
Match with food: rib beef; rack of lamb cooked with thyme; game.
Comments: very good, and characteristic of the appellation. It is a solid, but because of its richness it’s a modern Cahors.
