Visual aspect: straw-yellow colour, brilliant hue, brilliant bubbles. Nose: discreet and atypical first nose. Second nose with scents of spices, white pepper, ginger, slightly mentholated, fine. Palate: fresh at first taste, nice fatness, broad, straight. Terroir flavours in the aftertaste, schist and chalk. Crisp bubbles on the tip of the tongue. Match with food: lobster tartar on a bed of Granny Smith; vanilla zabaglione and raspberry biscuit. Comments: very interesting.
