Color: white, yellow highlights, beautiful brilliance. Nose: tangy apple, grapefruit, very yeasty (overripe banana). Nice roundness. Palate: clean attack, well-integrated alcohol, aromatic persistence and tangy flavors (apple, grapefruit). Hint of bitterness, herbaceous note. Stone fruits, green melon, hazelnut on the finish. Pairing: tempura shrimp, wasabi mayonnaise. Comment: very nice sake with a lot of personality, a well-mastered indulgence.
