Palate: well-balanced and very fresh, with lively acidity and vibrant sapidity. Excellent mid-palate crunch with lemon, pear, and apple. Saline and creamy character with wild herbs. Very fresh finish with great persistence. Pairing: line-caught sea bass with preserved lemon, chervil, and artichoke. Comment: an excellent example of a white Châteauneuf-du-Pape.
