Color: pale yellow, beautiful bubbles. Nose: buttery, lemony, with basil, tarragon, smoky, anise notes. Beautiful freshness. Hint of white flowers. Palate: lemon, very nice tension. Menthol hint, vegetal side. Yuzu, with a limestone touch. Pairing: tuna tartare; oyster tartare with yuzu and fresh mint vinaigrette. Comment: a beautiful, well-balanced, and well-crafted Champagne. Highly recommended. A cuvée to keep for 2-3 years, with limestone becoming more pronounced.
