Color: pale gold hue, lovely effervescence. Nose: orchard fruits, nuts, white flowers, oak, undergrowth. Fine, subtle. Palate: frank attack, with fruits and white flowers (mirabelle plum, jasmine, cherry blossom). In retro-olfaction we find the fruits of the orchard. A nice tension, ample, very long. Pairing: smoked sea bream with thyme. Comment: wine for ageing (5 years), with great richness for a champagne and a very little dosage. To discover, the woody side is magical!
