Palate: clean, with fruit and remarkable freshness for its age. Beautiful acidity and an interesting balance with the generosity of the yellow fruit, complemented by mushroom notes. Pairing: rockfish with Swiss chard chlorophyll and a brown mushroom/Shiitake emulsion. Comment: a wonderful surprise, rich and complex.
