François Carillon is the heir of an old ligneage of wine growers who are rooted in Puligny since the 17th century. With a desire for renewal while preserving the tradition, he takes his independence in 2010 to grow by himself part of the family vineyard.
François Carillon works his 6.5 hectares with fervour and passion surrounded by an enthusiast team. Future seems assured with his four young children Mathis, Paul, Clément and Elisa who still have time to get introduced to the Carillon culture and be trained by their father!
The cellars of the domain are located at the heart of the village in old family houses. They are not completely underground as the groundwater table is very high. The wines are matured in keeping with the Burgundy and family tradition. The wine stays one year in oak barrels where the alcoholic and malolactic fermentations will occur, with the same method for all the appellations: Bourgogne, Village, Premiers Crus and Grands Crus. Only the part of new barrels changes according to the appellations. After one year in the barrel the wines are vatted for six months in order to refine the élevage.
Now become jewels of the Côte de Beaune area the François Carillon wines are served on the best tables around the world, and especially his Chardonnays.
