Color: clear and star-bright, with an intense golden-green color. Viscous and very dense.

Nose: explosive nose with sweet spice like anise seed, macerated sweet fennel, carraway seed and star anise combined with a bitter root character of liquorice and sweet wormwood. There is also a sense of freshness reminiscent of verbena and mint. Very complex, layered and well-balanced nose.

Palate: very expressive, strong and sweet attack with the distinct intense notes of anise seed and fennel, great density and weight. Warming and spicy sensation of alcohol. The mid-palate shows more of the sweet spicy character of liquorice, caraway seed and star anise. The finish is long, warming and spicy, dominated by the bittersweet wormwood flavours.

Comment: this is a very serious and expressive absinthe. Serve on chilled ice when enjoying it on its own. Perfect for cocktails such as the Sazerac.
